A Simple and Delicious Lunch

This is so simple, and I know you all already know about it, just as I did, because it’s a version of a classic, but we forget don’t we? So consider this a gentle reminder of a simple and delicious lunch… Don’t mention it. You’re welcome.

Start with bacon left over from breakfast (how great is that to have made SO MUCH BACON that there is some left over?!)

Toast some nice whole grain bread. Let the toast cool a bit so the mayonnaise doesn’t soak into the bread.

Slather it with mayo and lay on some delicious, fresh-from-the-garden-or-the farmer’s-market-tomatoes.

Pile on the bacon (yum) or not if you want to go vegetarian.

Top it with avocado slices, pepper and salt.

Settle in to a scrumptious lunch.

You HAD forgotten, hadn’t you? Me too.

    OMG – thank goodness I’m being taken out to dinner shortly – reading this just now got my drool reflex in high gear! Guess I know what is on the agenda for lunch tomorrow 😉
