Comforting Danish Meatloaf

This recipe comes to us from Lee Hynes. You may remember that she’s responsible for the fabulous Boeuf Stroganoff recipe I shared with you earlier (see previous post Lee Hynes’ Boeuf Stroganoff Recipe) as well as that sumptuous Italian Tomato Pie recipe (see previous post Italian Tomato Pie Recipe). Well, I’m here to tell you that this Danish Meatloaf is every bit as good as those. I swear. Don’t believe me? Try it! And don’t forget, the leftovers make terrific sandwiches. Just had one sitting in the gallery’s studio. I highly recommend you give this one a spin around your own kitchen.

Danish Meatloaf

1 1/2 lb. ground beef
1 cup breadcrumbs
1 onion
salt and pepper
1/2 can tomato soup
1 beaten egg


Mix all together

Sauce

1/2 can tomato soup
1/2 cup water
2Tbs brown sugar
1tsp mustard
2Tbs vinegar

Mix together, pour sauce over meatloaf.

Bake in a 350 oven for at least an hour. Baste often.
Serves 4
