Do you remember that wonderful chocolate chili recipe a reader sent in to me (see previous post Turkey Chili With White Beans and Cocoa)? Well, I’ve made it several times since that first go, just recently for myself. I had all the ingredients in the pantry and freezer and it sounded great. But it’s a lot of chili for just one person, so I planned on freezing most of it. However, before I did, I had the idea of making it into burritos. I had some wonderful hand made flour tortillas from Trader Joe’s, so I filled them with the chili and some cheese, rolled them up, sprinkled more cheese on the top, covered them with tinfoil and baked them at 350 for a half hour. They were fabulous! I still ended up freezing part of the chili, but the rest of it has been made into delicious burritos. I’ve found they’re a great lunch to take to the gallery. Wrapped up in tinfoil, I pop one in the toaster oven and have a hot lunch. Nothing better! You should give it a try.
